Global Flavors and Fragrances Company Aims to Inspire the Science of Food Community with ‘Sippable’ Flavors for Food & Beverage Innovation

An annual tradition, Bell Flavors & Fragrances, Inc. (Bell) is hitting the road once again to exhibit at the Institute of Food Technologists’ (IFT) 2023-2024 Regional Section Suppliers’ Nights/Events. Spanning coast-to-coast across the United States, IFT’s Regional Sections encourage professionals steeped in the science of food to make strategic connections at a local level. These engaging events provide the opportunity for networking and education, while allowing suppliers to debut their latest products and services supporting the science of food community.

Bell recently wrapped up their 2022-2023 roadshow, having exhibited at the Minnesota Section IFT Annual Suppliers’ Expo (October 11) and the Longhorn Section IFT Suppliers Night & Food Industry Expo (October 12). During this time, the team debuted a menu featuring citrus flavors, showcasing concepts that delivered sweet-tart tastes from varietal and specialty citrus profiles to ignite tastebuds and broaden palates.

“The Bell team is gearing up for upcoming IFT Regional Section Suppliers’ Events, and we’re excited to debut our new menu, bursting with familiar yet treasured beer, wine, spirits and hops flavors. And, best of all? You can savor the flavor without the burn,” said Casey Schallert, Senior Corporate Chef at Bell Flavors & Fragrances.

Schallert notes, “We’re starting at homebase for the IFT organization and a city close to our global headquarters, Chicago, and will be making our way across the country, spanning Southern California to the Northeast. As consumers continue to prioritize their own health and wellness journeys, many are exploring sober-curious lifestyles. For our menu this year, we’re leaning into this concept while recognizing that alcohol flavors aren’t just reserved for beverages. We’re here to inspire our industry colleagues to take product development to the next level and explore the inclusion of these flavors in confections, snacks and sweet treats.”

Today’s consumer seeks alcoholic beverage options that fit their lifestyle and support mood enhancement and stress reduction, whether it’s a refreshing ready-to-drink seltzer or sippable, botanically infused mocktail. IFT’s Regional Sections offer a way for networking with professionals steeped in the science of food to make strategic connections at a local level. These engaging events provide the opportunity for networking and education, and allow suppliers to debut their latest products and services supporting the science of food community.

Bell recently exhibited at the Minnesota Section IFT Annual Suppliers’ Expo (October 12) and the Intermountain Section IFT Symposium and Suppliers Night (October 19-21), showcasing menu items with bold fruit and spice flavor blends, including Urfa Chili Meyer Lemon Snack Mix, Caviar Lime Nimbu Soda, Ponzu Togarashi Popcorn, Chocolate Hazelnut Brownie Bites and Caviar Lime and Dragonfruit Taffy. Following recent events, the Bell team will be heading to upcoming 2022 IFT Regional Section Suppliers’ Events to debut their new citrus-infused menu:

“The Bell team is excited to embark on our Regional IFT Roadshow to connect with fellow industry colleagues and release our new menu featuring citrus flavors, like Ruby Red Grapefruit and Calamansi. Consumers continue to gravitate toward food and beverage items that contain natural flavors given a rising interest in clean label. And, with the stress of current events, they’re gravitating toward comfort and products that provide an uplifting mood boost. Given their vibrant colors and sweet-tart tastes, citrus is typically associated with feelings of joy, and we’re delivering a bit of happiness and a boost of flavor bite by bite, states Benjamin Stanley, CRC, Corporate Chef – Sweet Applications Manager.

Bell will be joining exhibitors on the Expo floor to showcase a new, citrus-infused menu, educational resources and a team of culinary experts. Across the globe, consumers continue to lean into citrus, with 52% of U.S. consumers indicating that they like or love it and one-quarter (25.7%) of U.S. menus featuring it. Citrus flavors resonate particularly well among those looking to support their immune systems and increase their vitamin C intake. Bell offers iconic, natural citrus flavors, such as Grapefruit, Mandarin Orange and Meyer Lemon in addition to specialty citrus flavors, like Buddha’s Hand and Meiwa Kumquat.  These flavors can be added to a multitude of applications, including confectionery, sauces and dips, beverages, snacks, sweet goods and more.

Inspired by consumer preferences and marketing data, Bell will showcase the following refreshing, citrus-flavored menu items:

Sudachi Snack Mix        

This snack mix features Bell’s Sudachi flavor to lend tart and fresh notes of a Japanese Sudachi lime. Sudachi is a small, round, green citrus fruit and is a specialty of the Tokushima Prefecture in Japan. Given its natural sourness, it’s not typically eaten as a fruit, but rather used as a flavor in place of lemon or lime.

This delicious mix also features Bell’s Wasabi flavor to impart a heat-driven spice while Bell’s Kokumi technology makes the snack mix more rich and complex.

 

 

Citrus Slice Gummy Medley: Buddha’s Hand, Calamansi and Blood Orange 

 Buddha’s Hand: Bell’s Buddha’s Hand flavor has a distinct flavor profile, boasting notes of lemon and yuzu with a sweet, lemon blossom aroma and offering a unique spin on the classic fruit slice candy.

 Calamansi: Bell’s Calamansi flavor displays blended notes of tart lemon, lime and orange. This citrus fruit is commonly used in Filipino and Southeastern Asian cuisines and can range from green to yellow to orange in color.

Blood Orange: Bell’s Blood Orange Citrus flavor has notes of navel orange with hints of tartness and floral fruits and is usually less acidic than a traditional orange.

 

Pink Limoncello Champagne Spritz Mocktail

Whether savored on a hot, summer day or enjoyed during a cozy dinner party with friends, this mocktail is sure to be refreshing and provide a mood boosting pick-me-up. The mashup of Bell’s natural Champagne Type flavor, Pink Lemon Type flavor extract and Lemon flavor (Sorrento type) deliver sweet-tart citrus notes with a hint of bubbly.

 

 

 

 

 

Ruby Red Grapefruit IPA Popcorn

This seasoned popcorn features Bell’s natural Ruby Red Grapefruit, IPA, and Hop flavors, which blend together to impart notes of fresh squeezed grapefruit and hoppy IPA beer. These mini madeleines are a condensed version of a traditional French madeleine. They’re flavored with Bell’s Kumquat and Vanilla flavors, giving them a distinct citrus note that is sweet with notes of sour and tang. Vanilla rounds out this sweet treat to elevate the cookie.

Global Flavors and Fragrances Company Spotlights Global Flavor Explorations at Upcoming Event

Bell Flavors & Fragrances, Inc. (Bell) will be heading to the Institute of Food Technologists’ (IFT) 2022 First Annual Conference & Expo held in person and on demand from July 10-13 in Chicago, IL. IFT First is the largest business to business food innovation expo, convening professionals from around the world both in-person and virtually to discover the latest innovations, global trends and strategic solutions, all while making powerful connections. They’ll be joining over 700 exhibitors, debuting a new, immersive booth complete with a globally inspired tasting menu, educational resources and a team of culinary experts.

Bell’s new exhibit will take visitors on a journey like they haven’t quite experienced before. When approaching the exhibit, visitors will encounter a large reception counter complete with a back lit glass case, locking storage and iPad stations, their first touchpoint with the Bell team. Once inside, they’ll be able to grab coffee and free, printed resources from the hospitality counter. Visitors can then head to the food and beverage pairings counter, equipped with a demo counter, sink and refrigerator, where the culinary team will serve delicious global eats. Similar to the food and beverage pairings counter, the tasting counter will provide refreshing mocktail beverages that can be sipped at the soft, lounge style seating area. The exhibit also comes equipped with a flavor gamification counter and a food and product display window with locking storage.


Through their trend program, “Spark,” which showcases flavor and fragrance trend inspirations, Bell discovered that consumers are in search of escapism, traveling around the globe to find authentic and unique flavors from Eastern Europe to colorful and inspiring recipes of Latin America and Malaysia. They’re discovering the bounty of culinary surprises that the sea has to offer while exploring the wonders of nature in their own backyard, including local ingredients and heritage recipes that are foundational to our culinary existence.

 

Bell’s 2022 flavor exploration areas of focus inspired the tasting menu that will be available to booth visitors, including:

Karen Graves, MS to Sit on Expert Panel Exploring Opportunities and Challenges for Leveraging Knowledge and Consumer Understanding for Product Success

Bell Flavors & Fragrances, Inc. (Bell) is pleased to announce that Karen Graves, MS, Senior Director of Sensory and Consumer Sciences, will represent Bell at the Institute of Food Technologists’ (IFT) 2022 First Annual Conference & Expo held in person and on demand from July 10-13 in Chicago, IL.

IFT First is the largest business to business food innovation expo, convening professionals from around the world both in-person and virtually to discover the latest innovations, global trends and strategic solutions, all while making powerful connections. The organization boasts 25 topical, interest-based groups (divisions), with Karen serving as the current chair for the Sensory & Consumer Science Division (SCSD). She will represent the Division at a multitude of events throughout the conference, including the SDSC Leader Innovation Lab, Networking Reception, Social and Student Competition, in addition to the SCSD Student Leader Networking Breakfast and Student Leader Networking Expo Floor, both of which are new this year.

As part of IFT’s on-demand program, Karen’s presentation, “Sensory, It’s Worth It. Know the Value of Sensory & Consumer Research,” co-presented with Sharon Bender, MS, Sensory Scientist at Gehl Foods, Inc., will be made available online via the IFT First portal. This session will help participants understand the value of sensory and consumer research. “While the traditional Sensory Consumer mantra focuses on designing/answering according to the objective, the expectation for today’s professional is to provide business value and drive decisions. Since Sensory & Consumer Researchers must have exceptional influence, business acumen, and communication skills, all while dealing with scientific and statistical data, this presentation will discuss tips and techniques to enhance the value of Sensory Research, Consumer Research, Discriminating Testing and Team Evaluations.”

In addition to her on-demand presentation, Karen will sit on an expert panel on Tuesday, July 12 from 3:15 – 4:30 pm CT as part of the session, “How Do We Leverage Knowledge and Consumer Understanding for Product Success?” This session will “bring together diverse voices and perspectives from select on-demand presentations that relate to this Guiding Question. The moderated discussion will outline challenges and opportunities for how to address the question, followed by an extended question and answer period where attendees will have the opportunity to engage with other attendees.”
