Bell Flavors & Fragrances Hosts Gala Event in Chicago Showcasing Food Industry Trends and Live Cooking Competition
Annual Spark Ignites Event Debuts 2024 Edition of Bell’s Spark Trends Platform and Chef Fusion Challenge to 200+ VIP Guests During Inspired Food Industry Event at The Hatchery
NORTHBROOK, Illinois – May 23, 2024 – The most talked about food industry event of the year is a wrap! Bell Flavors & Fragrances, Inc. (Bell) thanks more than 200+ invited guests from the food and beverage business for attending the 2024 edition of their Spark Ignites event on Friday, May 17, at The Hatchery in Chicago.
This year, the annual invite-only event not only showcased the latest consumer trends and flavor predictions from Bell’s Spark Trends platform, but also reinvigorated the company’s live, “Chopped-style” cooking competition, Chef Fusion Challenge, featuring four chef teams hailing from leading food industry brands.
“All the stars aligned for Spark Ignites 2024 with the Hatchery as the perfect location. We loved the opportunity to serve guests our unique flavor creations based on this year’s Spark Trends. And bringing back the Chef Fusion competition for the first time since 2019 in front of a live audience was the icing on the cake,” said Vice President of Marketing & Industry Affairs, Kelli Heinz.
Bringing Bell’s 2024 Spark Flavor Trends
to Life at The Hatchery
Known as the top incubator for startups in the Chicagoland food industry, The Hatchery provided the perfect backdrop for bringing trend predictions from Bell’s 2024 Spark Trends Program to life. The gala event greeted guests with a Spark showcase room, replete with opportunities to learn more about the current global Macro Trends identified by the trend platform as well as opportunities to experience (meaning taste) the company’s impactful flavor predictions.
“Every year, our Spark Trends Platforms identifies the food industry trends that are inspiring consumers across the globe. In the process, our Culinary Applications teams also explore regions and cuisines that will be having a strong impact on what’s coming to the table for years to come. With that said, it was a powerful experience to see these flavor explorations showcased as food and beverage demos right here at Spark Ignites 2024. At the end of the day, the proof is in the flavors, and our teams went above and beyond in giving our guests a taste to remember.” – David Banks, Senior Director of Marketing
For more information on Spark Ignites 2024, download the brochure here.
Attendees of Spark Ignites 2024 were given the opportunity to engage in tastings at five tables, each inspired by one of Bell’s five global consumer Macro Trends as part of their Spark–Ignites Creativity, Inspires Senses® Platform. Bell’s Culinary Applications teams across Savory, Sweet, and Beverage categories translated the company’s culinary trend predictions into inspired taste experiences, with highlights including:
Four Teams, One Winner – The Chef Fusion Challenge Returns
Working in the Hatchery’s industry-size kitchen, in full view of Spark Ignites guests, the four chef teams were given one hour to whip up culinary creations based on Bell’s Spark Trends platform and using flavors as well as technologies from Bell’s Spark collection. Each team was tasked with creating three items; one beverage, one savory dish, and one sweet item while matching a common theme to win the grand prize.
“For the first time since 2019, Spark Ignites 2024 marked the return of Bell’s live cooking competition, the Chef Fusion Challenge. This year, the live event featured four chef teams representing the following top food industry brands: Blount Fine Foods, Reed Food Technology, Fuchs North America, and Griffith Foods. Attendees not only loved watching these culinary powerhouses heat up the kitchen, but also the opportunity to taste creative creations that brought our Spark Trends to life alongside those developed by our rockstar Bell team,” states Casey Schallert, Senior Corporate Chef.
Each of the four teams cooked up plenty of samples for all invited guests to taste and choose their favorites. An important step, because winners were chosen at the end of the cooking competition by all guests in live attendance via an online voting app. Aiding in the decision, a panel of seven hand-picked expert chefs – all certified members of The James Beard House and Research Chefs Association – provided color commentary and personal opinions as teams showcased their creations.
When the smoke cleared, the winner of the evening was Reed Food Technology. In a showcase that truly wowed all guests (and judges), the team brought to life a unique menu focused on Southern comforts with an unexpected twist. Dishes such as Donut Bread Pudding and Sweet Tea Brined Pulled Pork Wonton paired with Kool-Aid Pickle Margarita helped the team clinch first place. As a reward, each team member took home a premium KITCHENAID Pro 600 Stand Mixer.
In second place, the chef team from Fuchs North America cooked up three inspired menu items. Dishes such as The Deviled Egg and Matzo Ball Soup, paired with a Toasted Tea Spritzer helped the team clinch second place. As their prize, the chefs received an OONI Karu 12 Pizza Oven to ‘spark’ up their backyard cooking sessions.
Taking third place, the chef team from Griffith Foods brought their inspiration to the table via two versions of Windy City Ice Cream and Chi-takoyaki paired with “Not Malort.” This inspired showcase earned the team MARCATO Atlas 150 Pasta Machines for their Italian flavor explorations at home.
And last but not least, the team from Blount Fine Foods raised the bar by serving up Sweet Strawberry Entremet and Japanese Inspired Scallop Crudo, paired with a Sherbet Sunrise beverage. As a reward, each member took home a THERMOWORKS ONE Thermapen to keep their food temperature on point in the most heated kitchen moments.
Speaking of kitchen moments, Spark Ignites 2024 provided an unforgettable time for Bell’s guests to mingle and network with fellow food industry professionals. The Bell team is taking home lots of inspiration from the night at The Hatchery and looks forward to serving its customers the flavors and technologies they need to delight consumers this year – and for years to come.
“This year’s event once again brought our Bell’s Spark Trends to life in a festive and inspiring atmosphere. Our Culinary Applications teams did a fantastic job in translating our Spark Macro Trends and Flavor Explorations into delicious dishes and beverages that really resonated with our guests. Plus, having the Chef Fusion Challenge back as a live event took this special evening over the top. A sincere thank you goes out to everyone who attended and made this event possible!”– Kelli Heinz, Vice President of Marketing & Industry Affairs

Bell Showcases Authentic Tastes Supporting the Industry’s Push for Clean Label Initiatives
Bell Flavors & Fragrances Showcases Authentic Tastes
Supporting the Industry’s Push for Clean Label Initiatives
Global Flavor & Fragrance Company’s USDA Kettle Crafted Meat Flavors Enhance Natural
Flavor Profiles and Streamline Ingredients Lists
NORTHBROOK, Illinois – November 30, 2023 – In response to rapidly growing interest in clean label claims, Bell introduces a new line of USDA Kettle Cooked Meat Flavors. These flavors, including Free Range Chicken, Grass-Fed Beef and Organic Turkey, enhance a product’s natural broth flavor profile while maintaining a cleaner label.
Developed at Bell’s Technology and Innovation Center, a USDA-certified facility located at the company’s global headquarter that unites diverse expertise under one roof and rapidly produces customized flavors with a clean label, USDA Kettle Cooked Meat Flavors fulfill both consumer expectations and manufacturer needs.
“Bell’s investment into this vertical, bolsters our capability to meet growing consumer demand for clear and simple labels, with flavoring food stuffs made from real meat,” states Peter Gollmer, Bell’s Director of Savory Business Development.
Consumer interest in foods and beverages that present a clean label is at an all-time high. In fact, 78% of U.S. shoppers will pay higher prices for clean label products (Food Navigator-USA, 2023). Today’s consumer expects full transparency on the ingredients incorporated into the products they purchase and demands comprehensive information on the impact of their choices from an environmental, social and health standpoint, with 64% willing to switch brands if a competitor offers more detailed product information (Food Navigator-USA, 2023). Simply put, they’re reaching for products that contain natural, minimally processed ingredients, are free from harmful ingredients and are ethically produced.
In line with consumer desires, Bell’s USDA Kettle Crafted Meat Flavors are made from organic ingredients, crafted in small batches, and cooked “low and slow” for an authentic flavor experience. In addition to being non-GMO and containing minimally processed flavor and color, they can be customized to fit a variety of culinary and application needs, such as soups and broths, seasoning blends, sauces and more.
To validate flavor efficacy and integrity, Bell’s Sensory & Consumer Science team has evaluated each flavor with trained panelists to understand the impact in corresponding broths. The verdict: All broth flavors maintained the shape of the broth profile while enhancing select flavor attributes.

Bell Flavors & Fragrances to Debut Alcohol-Inspired Flavor Menu at 2023- 2024 Regional IFT Roadshow
Bell Flavors & Fragrances to Debut Alcohol-Inspired Flavor Menu at 2023- 2024 Regional IFT Roadshow
Global Flavors and Fragrances Company Aims to Inspire the Science of Food Community with ‘Sippable’ Flavors for Food & Beverage Innovation
NORTHBROOK, Illinois – October 30, 2023 –
An annual tradition, Bell Flavors & Fragrances, Inc. (Bell) is hitting the road once again to exhibit at the Institute of Food Technologists’ (IFT) 2023-2024 Regional Section Suppliers’ Nights/Events. Spanning coast-to-coast across the United States, IFT’s Regional Sections encourage professionals steeped in the science of food to make strategic connections at a local level. These engaging events provide the opportunity for networking and education, while allowing suppliers to debut their latest products and services supporting the science of food community.
Bell recently wrapped up their 2022-2023 roadshow, having exhibited at the Minnesota Section IFT Annual Suppliers’ Expo (October 11) and the Longhorn Section IFT Suppliers Night & Food Industry Expo (October 12). During this time, the team debuted a menu featuring citrus flavors, showcasing concepts that delivered sweet-tart tastes from varietal and specialty citrus profiles to ignite tastebuds and broaden palates.
“The Bell team is gearing up for upcoming IFT Regional Section Suppliers’ Events, and we’re excited to debut our new menu, bursting with familiar yet treasured beer, wine, spirits and hops flavors. And, best of all? You can savor the flavor without the burn,” said Casey Schallert, Senior Corporate Chef at Bell Flavors & Fragrances.
Schallert notes, “We’re starting at homebase for the IFT organization and a city close to our global headquarters, Chicago, and will be making our way across the country, spanning Southern California to the Northeast. As consumers continue to prioritize their own health and wellness journeys, many are exploring sober-curious lifestyles. For our menu this year, we’re leaning into this concept while recognizing that alcohol flavors aren’t just reserved for beverages. We’re here to inspire our industry colleagues to take product development to the next level and explore the inclusion of these flavors in confections, snacks and sweet treats.”
Today’s consumer seeks alcoholic beverage options that fit their lifestyle and support mood enhancement and stress reduction, whether it’s a refreshing ready-to-drink seltzer or sippable, botanically infused mocktail. With 1 in 4 U.S. consumers looking for flavor blends in beverages and showing interest in new and unique taste profiles (Mintel, 2023), exotic, floral and tropical flavors are winning over tastebuds. However, tried and true classics, such as whiskey sours and rich red wines, will never go out of style.
Bell offers a wide variety of alcohol inspired and complementary flavors, ranging from full-bodied bourbon to delightfully sweet mango. Also, individual hop varietals and technologies that support an enjoyable sipping experience, such as alcohol boosters and smoothers. Alcohol flavors continue to be infused in a variety of applications that look beyond the glass, and their versatility. Their ability to be incorporated into familiar foods that consumers know and love is undeniably appealing.
Inspired by consumer trends and marketing insights, Bell will debut the following menu items featuring alcohol-based flavors at booth #105:
New York Sour Trail Mix Featuring Bell’s Malbec Type, Bourbon and Lemon Lime Flavors
Cocktail Gummy Worms Featuring the following Bell flavor profiles:
Tequila + Lime: Tequila Type, Peruvian Lime Type and Alcohol Booster Type Flavors Paloma: Tequila Type, Peruvian Lime Type, Alcohol Booster Type and Ruby Red Grapefruit Type Flavors Tequila Sunrise: Tequila Type, Alcohol Booster Type, Cherry and Blood Orange Flavors

Bell Launches Citrus Campaign to Inspire Food, Beverage & Fragrance Marketplace Innovation
Bell Flavors & Fragrances Launches Citrus Campaign to Inspire Food, Beverage & Fragrance Marketplace Innovation
Citrus Fruits Provide Ripe Opportunity to Explore Flavors & Fragrances Beyond Iconic Tastes and Scents
NORTHBROOK,Illinois– September 21, 2023–
Citrus, a beloved and refreshing fruit family, is prized by chefs and perfumers across the globe for its versatility, sweet-tart profile, and ability to elevate the food, beverage, and fragrance marketplace. And, consumers continue to lean into the squeeze! In the United States, 59% of consumers indicate that they like or love citrus and one-quarter (25.7%) of menus feature it (Datassential, 2023). With 56% of global consumers actively look for healthy ingredients in food and beverages (Euromonitor International, 2022), citrus flavors resonate particularly well among those looking to support their immune systems, boost vitamin C intake and elevate their mood.
Consumers are most familiar with orange-, lemon- and lime-based flavors and fragrances, which offer an approachable starting point for marketplace innovation. As they seek novel and sensorial experiences from products, they take interest in new citrus flavors and fragrances, but won’t follow through with a purchase unless they know it’s worth the spend. The industry can ease purchase decision stress and transition newer flavors and fragrances to mainstream palettes by pairing them with and relating to familiar, ‘hero’ elements that consumers know and trust.
“As consumers continue to seek out unique flavors and exotic fruits, our extensive line of citrus varietals offers a way for manufacturers to provide authentic taste experiences without the hassle or expense of sourcing these hard-to-find offerings. Our team of Flavorists and Perfumers have gone to extensive lengths to provide flavors and fragrances that take consumers on a journey around the world without leaving the comfort of their homes. We are excited to bring to life an international collection of rare citrus flavors that may never see the light of day due to their short shelf life or availability,” states David Banks, Senior Director of Marketing.
Citrus Flavor Solutions While citrus fruits like oranges, lemons and limes continue to be go -to staples, consumers seek more niche and nuanced citrus flavor profiles and unique varietals from around the world to ignite their taste buds and broaden their palates. Bell offers iconic citrus flavors, such as Grapefruit, Mandarin Orange and Meyer Lemon in addition to specialty citrus flavors, like Buddha’s Hand and Peruvian Lime.
These flavors are available in a wide variety of formats and formulations (e.g., natural, organic) to meet product development needs and regulatory standards for a multitude of applications, ranging from baked sweet goods to ready-to-drink cocktails.
Citrus Fragrance Solutions With its refreshingly tangy and fragrant profile, Bell features citrus in a variety of natural, plant forward offerings:

Bell Validates Global Spark Trends at the 2023 IFT FIRST: Annual Event & Expo
Bell Flavors & Fragrances Validates Global Spark Trends at the 2023 IFT FIRST: Annual Event & Expo
Global Flavors and Fragrances Company Confirms 2023 Trend Forecasts at theWorld’s Leading Food Industry Showcase in Chicago, IL from July 16-19
Attracting 17,000 international visitors and 1,100 exhibitors, the annual convention, hosted by the Institute of Food Technology (IFT), once again proved its value as the place for trendspotting and networking in the global food industry.
What’s more, the products and technologies on display at McCormick Place confirmed key forecasts from Bell’s global Spark – Ignites Creativity, Inspires Senses® program. Specifically, IFT FIRST showcased innovative methods to enhance natural ingredients and resources ( ‘Nature R*Evolution’), support healthy lifestyles and longevity (‘A Better Me’) and spark joy with impactful flavor experiences (‘360-Degree Rewards’).
“Every year, Bell Flavors & Fragrances invests considerable resources to capture the most important dynamics impacting consumers across the globe. It was reassuring to witness key trends from this year’s forecast confirmed bytechnologies and innovations displayed at the 2023 IFT FIRST: Annual Event& Expo.” – Kelli Heinz, Vice President of Marketing and Industry Affairs
“IFT FIRST confirmed our central Spark Trends predictions for 2023 and beyond. We see it as a true testament to the accuracy of the global Spark Trends platform and the immense value we provide every single year to Bell customers. Bell returns from IFT FIRST inspired and encouraged by the level of innovation and forward-looking research to support the future of the global food system, with our Spark Trends program leading the way.”– David Banks, Senior Director of Marketing
Key observations from attending IFT FIRST 2023 include the following predictions featuring three Spark Macro Trends:
As the central theme of IFT FIRST 2023, the show evaluated solutions to current challenges in the food supply asking, “Innovation in a Time of Crisis: Can We Future-Proof the Food System?” In the process, unmodified ingredients and technologies for enhancing nature provide much-needed answers.
Seeing the Trend at IFT FIRST 2023: Nature R*Evolution figured prominently in a vast variety of alternative protein products, using the latest tech for masking, neutralization, and mouthfeel enhancement alongside natural flavors. Also trending, extenders and replacers provided powerful solutions to challenges in global supply chains, most importantly, honey and citrus varieties. Plus, a new slew of natural sweetness enhancers and upcycled byproducts (e.g., coffee fruit) squeeze more value out of strained food supplies.
Speaking of enhancing value, the quest for healthier lifestyles presented the number one leading consumer trend at IFT FIRST 2023. True to Bell’s Spark Macro Trend, ‘A Better Me,’ consumers demand functional benefits and tangible health improvements from their food. The trend that took the proverbial cake at IFT FIRST? Sugar reduction!
Seeing the Trend at IFT FIRST 2023: The health-focused trends resonate with the mission of IFT FIRST, which is short for “Food Improved by Research, Science, and Technology.” Featured functional ingredients and technologies sought to boost of alertness, immunity, and sleep via mushrooms and probiotics. Collagen for healthy aging and low-carb starches for weight management were also in the spotlight.
The industry demands serious answers to serious challenges, but flavor is still the number one factor influencing purchase decisions. In line with our Spark Trend for ‘360° Rewards’, consumers increasingly use delicious foods to treat themselves with delight and experience culinary escapes. Based on research presented at IFT FIRST, most consumers want familiar flavors with a slightly new twist. According to Bell’s Micro Trend, ‘Newstalgia’, right now is the time to score big with beloved classics, as 59% of U.S. chocolate consumers enjoy familiar flavors in new product releases (Mintel, 2023).
Seeing the Trend at IFT FIRST 2023: The show featuredfamiliar flavors and recipes with their volume turned up to the max. Whether it was extra-stuffed chocolate cookies, explosive umami snack mixes, double-glazed meatballs, BLT-flavored potato chips, and extra hot pepper sauces – companies are serving comfort foods without stepping beyond the comfort zone.

At IFT FIRST 2023, Bell leans into ‘Newstalgia,’ a Micro Trend within the broader 360° Rewards Macro Trend, featuring a menu and booth design inspired by a decade marked by grunge music, blockbuster movies, experimental flavors and Michael Jordan superfans: the 1990s. Newstalgia is the twist that everyone loves, blending the familiar with the excitement of something new, drawing inspiration from pop culture and refurbishing retro phenomena from different decades.
“We are excited to revisit the ‘90s this year at IFT through Bell’s ‘Newstalgia’ Micro Trend. Our product showings interweave old trends that are still relevant with a modern touch, drawing inspiration from pop culture and refurbishing retro phenomena from our favorite ‘90s staples. Consumers continue to seek the comforting moment of their youth, but with a real-world twist. We are seeing this ‘Newstalgic’ approach increasingly come to life as Gen Xer’s look to relive their youth and crave their childhood favorites with a Gen Z twist. Bell is bringing to life wild formats like edible slime and unique flavors like a Cubano inspired bagel bite. Bell Captures Granular, Globally Relevant Consumer Behaviors and Industry Trends in 2023 Edition of Spark Trends Platform
Bell Flavors & Fragrances Captures Granular, Globally Relevant Consumer Behaviors and Industry Trends in 2023 Edition of Spark Trends Platform
Bell Flavors & Fragrances, Inc. (Bell) recently announced new trend inspirations via their Spark–Ignites Creativity, Inspires Senses® platform. Since 2015, Bell’s Spark Trends platform is the essence of creativity and the future of influential trends in the flavor and fragrance industries. Spark provides a unique one-stop guide to what’s next in today’s rapidly changing consumer landscape.
Bell’s Spark Trends platform continues to track five global consumer Macro Trends that are impacting consumers today and into the near future, representing core behavioral values shared by all humans. They are seen around the world and serve as the foundation for more granular consumer behaviors on a micro level (i.e., Micro Trends). Micro Trends are closely tied to unique geographies, categories, flavors, fragrances and botanicals in the here-and-now. Bell tracks these trends closely in the U.S. and across regional locations.
“Predicting the most impactful trends of the future is challenging, but the Spark platform always starts with a common denominator: the essence of what makes us all human. When we think about Micro Trends, they are the phenomena firmly impacting consumers in the here-and-now. Micro Trends shape consumer experiences based on what’s happing in the current world and can be attributed to specific actions or changes in market or consumer dynamics. We’re thrilled to share them with the industry,” says Kelli Heinz, Vice President of Marketing & Industry Affairs.
MACRO TREND #1 – NEW HORIZONS: THE UNION OF IMAGINATION & TECHNOLOGY
From dreaming of a reality escape to embracing virtual celebrations and new ways of connecting digitally, consumers crave a new era of interconnectedness via physical and digital fusion called ‘phygital.
The New Horizons Micro Trends include:
EXTREME FUSIONS: Bold, new mashups can be found in co-branded meal and fragrance promotions, as well as food trucks and street food restaurants at the intersection of formerly separate cuisines, as consumers break boundaries and disrupt the mundane routines.
SENSORIAL SPARKS: There are millions of options to craft immersive experiences and products that redefine the boundaries of perception with titillating flavors and fragrances that engage the senses and create memorable moments.
NEW E-RA: The previous year’s trend towards escapism gains a digital dimension, as consumers’ minds and palates gravitate towards the metaverse as a place to discover and interact with foods, beverages and consumer products.
MACRO TREND #2 – NATURE R*EVOLUTION: THE NEW DAWN OF ‘GREEN’ INNOVATION
This trend looks at the new dawn of ‘green’ innovation to safeguard the future of the planet, without sacrificing the familiar scents and taste sensations consumers continue to crave.
The Nature R*Evolution Micro Trends include:
ALTERNATIVE EVERYTHING: Smart alternatives are taking center stage and consumer lifestyles continue trending towards healthier options, with vegetarian and vegan food choices in high demand and ‘flexitarian’ lifestyles as the new mainstream.
CLEAN LABEL: Brands are pressed to replace harmful ingredients and manufacturing methods with sustainable alternatives, all the while reducing carbon emissions in search of not just carbon neutrality, but climate positivity.
VALUE TECH: Nature made even more valuable and sustainable – with technology. Value-adding tech holds the key to enhancing the flavors, smells, and appeal of natural ingredients and finished products.
MACRO TREND #3 – A BETTER ME: A HEALTH-FORWARD LOOK AT THE BEST YOU
This trend explores a fresh approach to the best version of ‘you’ as consumers become immersed in holistic wellness and prioritize mental health, self-care and less crowded calendars.
The A Better Me Micro Trends include:
MOOD MODS: As this trend evolves, consumers will continue to gravitate toward natural remedies such as ‘good mood’ essential oils and products containing botanical extracts or food-grade botanicals to change the color on that mood ring.
BALANCING BLISS: The quest for achieving ‘health’ with a holistic focus will be intermingled with indulgent allowances as consumers turn to natural fragrances and products made with organic ingredients, while also honoring heritage cuisines and home cooked favorites.
FUNCTIONAL FINDS: Brands will be challenged to continue incorporating functional ingredients and adaptogens into food, beverage and fragrance products while maintaining the familiar tastes, textures and sensorial experiences that consumers know and expect.
Consumers have been searching for silver linings and are now giving themselves the permission to embrace escapism, indulge unapologetically and spark joy in unique ways.
The 360º Rewards Micro Trends include:
NEWSTALGIA:The twist that everyone loves. By using something new that harkens back to shared pop culture moments, brands can help unglue consumers from digital screens and dive into enjoyments of their own reality.
LIMITED EDITION: Limited editions are about capturing a passing moment – in exclusive ways that motivate consumers to stand in line or make purchases at fleeting moments in time. They’re looking for the next new thing of tomorrow.
BACK TO BASICS:Traditional foods and scents provide a connection to the stories of our ancestors. Brands must take a step back and remember the good old days and what makes them special.
MACRO TREND #5 – TREE OF LIFE: UNITED BY CULTURAL ROOTS
Consumers remain passionate about paying it forward to mother earth, but now are more aware of human connections across the globe, championing diverse heritage, authentic values and sustainable products.
The Tree of Life Micro Trends include:
FUTURE PROOF: The time has come for ‘future-proofing’ business models and supply chains, as global crises and inflationary pressures add urgency and require new ways to replace and rebuild resources, guided by global regulatory standards.
HUMAN CONNECTION: This is the time to thrive for brands that are paying it forward, whether creating sustainable and fair trade certified businesses in emerging economies or shining a light on underprivileged communities and their traditions.
HYPER LOCAL: While the trend towards exploration and discovery is back with a vengeance, the diversity of local communities starts to shine as consumers find the imprints of ethnic cuisines in their own communities.
Bell’s annual Spark program allows companies to stay abreast of the latest trends and market dynamics. It thereby fuels the flavor and fragrance industries with innovative ideas for new, forward-looking marketing and product development concepts that inspire consumers’ palates and invigorate brand initiatives.

Health and wellness priorities, redefined: While physical and social aspects of health are here to stay, we’re immersing ourselves in holistic wellness, prioritizing mental health, self-care and less crowded calendars. This trend was formerly Bell’s Well-Balanced macro trend and explores a fresh approach to the best version of ‘you’.
Don’t delay rewards: We’ve been searching for silver linings – the everyday things that make us happy and bring comfort. Now, we’re giving ourselves the permission to embrace escapism, indulge unapologetically and spark joy in unique ways. This trend was formerly Bell’s Finding Silver Linings macro trend.
Everyone on the planet is connected by their environmental choices: We remain passionate about paying it forward to mother earth, but, now more than ever, we’re aware of human connections across the globe, and we are becoming champions of diverse heritage, authentic values and sustainable products as a means to making the world a better place for all. This trend was formerly Bell’s Global Consciousness macro trend.

Bell Flavors & Fragrances Embarks on 2022-2023 Regional IFT Roadshow
Global Flavors and Fragrances Company Travels Cross-Country to Join The Science of Food Community’s Supplier Events
October 26, 2022 —
Bell Flavors & Fragrances, Inc. (Bell) is hitting the road to exhibit at the Institute of Food Technologists’ (IFT) 2022-2023 Regional Section Suppliers’ Events spanning coast-to-coast. IFT’s Regional Sections offer a way for networking with professionals steeped in the science of food to make strategic connections at a local level. These engaging events provide the opportunity for networking and education, and allow suppliers to debut their latest products and services supporting the science of food community.
Bell recently exhibited at the Minnesota Section IFT Annual Suppliers’ Expo (October 12) and the Intermountain Section IFT Symposium and Suppliers Night (October 19-21), showcasing menu items with bold fruit and spice flavor blends, including Urfa Chili Meyer Lemon Snack Mix, Caviar Lime Nimbu Soda, Ponzu Togarashi Popcorn, Chocolate Hazelnut Brownie Bites and Caviar Lime and Dragonfruit Taffy. Following recent events, the Bell team will be heading to upcoming 2022 IFT Regional Section Suppliers’ Events to debut their new citrus-infused menu:
November 1, 2022: Chicago Section IFT (CSIFT) Annual Suppliers Expo and Symposium (booth #308)
November 16-17, 2022: Longhorn Section IFT Suppliers Expo (booth #242)
“The Bell team is excited to embark on our Regional IFT Roadshow to connect with fellow industry colleagues and release our new menu featuring citrus flavors, like Ruby Red Grapefruit and Calamansi. Consumers continue to gravitate toward food and beverage items that contain natural flavors given a rising interest in clean label. And, with the stress of current events, they’re gravitating toward comfort and products that provide an uplifting mood boost. Given their vibrant colors and sweet-tart tastes, citrus is typically associated with feelings of joy, and we’re delivering a bit of happiness and a boost of flavor bite by bite, states Benjamin Stanley, CRC, Corporate Chef – Sweet Applications Manager.
Bell will be joining exhibitors on the Expo floor to showcase a new, citrus-infused menu, educational resources and a team of culinary experts. Across the globe, consumers continue to lean into citrus, with 52% of U.S. consumers indicating that they like or love it and one-quarter (25.7%) of U.S. menus featuring it. Citrus flavors resonate particularly well among those looking to support their immune systems and increase their vitamin C intake. Bell offers iconic, natural citrus flavors, such as Grapefruit, Mandarin Orange and Meyer Lemon in addition to specialty citrus flavors, like Buddha’s Hand and Meiwa Kumquat. These flavors can be added to a multitude of applications, including confectionery, sauces and dips, beverages, snacks, sweet goods and more.
Inspired by consumer preferences and marketing data, Bell will showcase the following refreshing, citrus-flavored menu items:
Sudachi Snack Mix
This snack mix features Bell’s Sudachi flavor to lend tart and fresh notes of a Japanese Sudachi lime. Sudachi is a small, round, green citrus fruit and is a specialty of the Tokushima Prefecture in Japan. Given its natural sourness, it’s not typically eaten as a fruit, but rather used as a flavor in place of lemon or lime.
This delicious mix also features Bell’s Wasabi flavor to impart a heat-driven spice while Bell’s Kokumi technology makes the snack mix more rich and complex.

Bell Flavors & Fragrances Debuts New, Citrus-Infused, Snack-Centric Menu at SupplySide West & Food Ingredients North America 2022
Global Flavors and Fragrances Company Joins 18K+ Ingredient Buyers and Suppliers at Upcoming Finished Products Conference
October 25, 2022 —
Bell Flavors & Fragrances, Inc. (Bell) will be heading to SupplySide West & Food Ingredients North America 2022 held in person from October 31 – November 4, 2022 in Las Vegas, Nevada. Bell will join over 18,000 ingredient buyers and suppliers from a variety of industries, including beverage, personal care, dietary supplement, functional food and sports nutrition. This conference brings together health and nutrition professionals and 1,300+ exhibitors to engage in educational and event programming and learn about the latest science, trends and strategies driving global finished products development. SupplySide West & Food Ingredients North America also provides companies the inspiration needed for growth and innovation, and the opportunity to network with industry colleagues in R&D, marketing, supply chain management, and more.
“The Bell team is heading to Supply Side West and Food Ingredients North America 2022 ready to inspire the industry with snackable creations and new flavor mashups, like our Ruby Red Grapefruit IPA Popcorn and Apple Cider Vinegar Gummy, incorporating flavors such as Apple Cider, Hibiscus and Hops. The demand for snack foods and gummies among consumers continues to increase, and products with functional benefits are experiencing strong growth. In the past, these product categories sacrificed on taste, however, recent innovation satisfies nutrition and taste preferences, while fitting into healthy lifestyles. We’re continuing to experiment with savory, citrus and indulgent flavors in the snack and gummy categories while keeping consumer desires and market data top-of-mind,” states Casey Schallert, Senior Corporate Chef.
These past few years have encouraged consumers to pause, reflect and reinvigorate their interest in taking positive steps to improving their personal health and creating the best version of themselves. In doing so, they’re turning to retail products to meet their anxiety support (+38%), mood and stress health (+24%) and sleep support (+37%) needs (Nielsen, 2022). Functional products, including gummies, have huge market potential – in fact, function claims in the gummy category have increased 171% between 2016-2021. And, among those who are looking to increase their vitamin C intake and boost immune support, citrus flavors continue to resonate particularly well. Bell offers a variety of natural citrus flavors (e.g., Meyer Lemon), savory flavors (e.g., Roasted Pork), and culinary mashup and orchard fruit flavors (e.g., Cardamom Apricot) that can be incorporated into a variety of applications, like snacks, confectionery and more.
This year, Bell’s booth (#1447) will feature educational resources and provide attendees the opportunity to connect with the culinary team and indulge in a new, citrus-infused, snackable menu:
Citrus Slice Gummy Medley: Buddha’s Hand, Calamansi and Blood Orange
Buddha’s Hand: Bell’s Buddha’s Hand flavor has a distinct flavor profile, boasting notes of lemon and yuzu with a sweet, lemon blossom aroma and offering a unique spin on the classic fruit slice candy.
Calamansi: Bell’s Calamansi flavor displays blended notes of tart lemon, lime and orange. This citrus fruit is commonly used in Filipino and Southeastern Asian cuisines and can range from green to yellow to orange in color.
Blood Orange: Bell’s Blood Orange Citrus flavor has notes of navel orange with hints of tartness and floral fruits and is usually less acidic than a traditional orange.
Ruby Red Grapefruit IPA Popcorn
This seasoned popcorn features Bell’s natural Ruby Red Grapefruit, IPA, and Hop flavors, which blend together to impart notes of fresh squeezed grapefruit and hoppy IPA beer. A refreshing spin on an everyday snack, this popcorn will inspire memories of sweet summertime and sipping on a cold beer.
Hibiscus Apple Cider Vinegar Gummy
This elevated twist on traditional gummy candies feature Bell’s natural Hibiscus flavor, offering a delightfully tart and sour tang. Hibiscus flowers provide a tart, earthy flavor that is on the rise in new product innovation, from cocktails to confections, bringing an undeniably vibrant crimson hue.

2022 Organic Recertification
Bell Flavors & Fragrances is excited to announce the completion of the annual Organic Recertification audit for flavors manufactured to the USDA Organic Flavor Program in its Northbrook, IL location May 18, 2022 —
Recertifying USDA Organic Flavors
Bell Flavors & Fragrances (Bell F&F) recently completed an audit on its expanded range of USDA-certified organic flavors at its Northbrook, IL location in partnership with Quality Assurance International (QAI). This annual assessment of Bell F&F’s organic flavor line is critical within the industry, and the QAI program is a key supporting factor in providing customers with the confidence of Bell F&F’s organic flavor portfolio. QAI is authorized by the USDA as an international organic certification company that works to certify organic manufacturing processes and operations to comply with National Organic Program standards.
Principled Standards for Certifying Organic Flavors
Each year, Bell F&F certifies its organic flavors as a flavor manufacturing house that handles organic products prior to reaching consumers and store shelves. In order to be defined as organic, the flavors, botanicals and ingredients that Bell F&F uses for final product applications must meet certain criteria and strict compliance standards, including growth and extraction without synthetic pesticides or GMO’s. Among other criteria, protein-producing animals are also treated properly and without the use of antibiotics or growth hormones.
Organic Claims are Key Drivers with Consumers
According to Mintel, 61% of U.S. consumers agree that organic products take a higher importance to them in dairy, meats and deli/prepared foods, and 74% of U.S. consumers agree that food companies should be more transparent about their farming practices.
Bell F&F currently produces over 200 certified organic flavors held to these high QAI and USDA standards. Bell F&F is always looking at expanding its portfolio of certified organic flavors to service all the markets the company operates in.

2022 Spark Flavor Explorations
Bell Flavors & Fragrances Introduces 2022 Spark Flavor Explorations This year’s Spark trends find us traveling around the globe to find authentic and unique flavors from Eastern Europe to the colorful and inspiring recipes of Latin America & Malaysia. We see consumers diving to the deepest parts of the ocean and discovering the bounty of culinary surprises that the sea has to offer and exploring the wonders of nature in their own backyards and rediscovering local ingredients and heritage recipes that are the foundation of our culinary existence.
2022 Spark Flavor Explorations Start with the Larger Macro & Micro Trends
The Spark trends platform not only looks at the current day, but takes a longer term view identifying key consumer macro trends that will serve as a foundation for today and into the future. These macro trends were collectively identified by Bell’s global marketing teams and represent the core behavioral values present in all humans combined with the technology innovations and market dynamics that are shaping what the future of flavors, fragrances and ingredients will look like next year and beyond.
“Bell’s Spark trends platform not only identifies what’s up and coming for next year in the form of flavor and fragrance trends, but takes a long term view by identifying what’s at the root of these short lived fads and why we maintain the same macro and micro trends across both the flavor and fragrance industries as a collective whole and not simply by category or segment.” Kelli Heinz, VP of Marketing & Industry Affairs.
Aligned with actual physical travel we all yearn for, we are also embarking on a journey into the Metaverse, where technology and lifestyle are becoming intermingled and the ways that we communicate, interact and consume products are sometimes only in the “virtual world” around us. As Instagram, TikTok, Pinterest, Zoom, Netflix and other platforms continue to dominate how we discover new food, beverage and product trends it slowly continues to evolve the ways we interact with and ultimately consume these products. Whether sharing a holiday meal over Zoom, hosting a virtual wine tasting or having an authentic meal from every continent delivered to your home each week, technology helps us stay connected, travel the globe and taste the world around us from the comforts of our own homes.
In contrast to this inner explorer we all possess, consumers are also yearning to stay home and continue to focus on their own health, safety and find an acceptable balance between work and life. The great resignation of 2021 has led millions of Americans to quit their jobs and rethink what is important to them. They are looking for better control of their lives in the form of the foods they eat, the impact they are having on the planet and their overall wellness of mind, body and soul. Whether it is choosing plant based alternatives, better-for-you products from the sea or finding comfort in rediscovering lost recipes, ingredients and traditions, there is a clear consumer movement in wanting to rediscover the foundational flavors that were defined by our childhood and our ethnic backgrounds and dictated by the regions we live and ultimately the place we call home.
“As we embark on another year of Spark trends we have set our sights on both the global world around us that has seemed so far away in recent years and the home that we have all become so accustomed to and in some cases trapped in over the past 24 months. As consumers continue to be limited in their travel options again due to the COVID-19 virus, our 2022 Spark trends take us from one part of the world to another as the inner explorer in all of us yearns for a return to the freedom of travel.” David Banks, Director of Marketing
With these consumer trends in mind Bell’s 2022 flavor explorations take us from one part of the world to another and into our own backyards. They take us under the oceans and into the coastal cuisines that have shaped many of our palettes. Finally, they take us back to our roots as we rediscover our culinary heritage. Bell’s 2022 Spark Flavor Explorations include:
This regional cuisine combines classic European flavors with Western Asian dishes creating a diverse cuisine filled with strong spicy foods, pickled vegetables and roasted meats.
A dazzling array of diverse and interchangeable flavors spanning 22 countries that captures the true spirit of Latin highlands in the uniqueness that a specific Latin region brings to a familiar, time-honored recipe that could have the same name but taste completely unique due to its local flair.
Breakthrough Flavors
Acerola, Achiote, Cobanero Chili, Capuacu, Merken Chili
This diverse Asian Malay street food culture draws from the influential neighboring countries of Indonesia, China and India to bring together rich cultures and flavors showcased in hawker centers, night markets, and coffee shops called kopitiams across Malaysia.
For centuries, coastal communities have included nutritious, delicate and flavorful gifts from the sea and land to develop new culinary paths. These micro trends are the year over year fads that consumers experience and help to create based upon what is happening in the world today. Micro trends evolve from the larger macro trends and can be tied to specific markets, categories, flavors, fragrances and botanicals.

Bell partners with Gewandhausorchester Leipzig
Bell Flavors & Fragrances EMEA becomes part of the Gewandhausorchester Sponsors Club.
With the start of the new Gewandhaus season 2019/20 Bell Flavors & Fragrances starts its engagement as official Classic Partner of the worldwide renowned Gewandhaus Orchestra in Leipzig. With its commitment, the global operating company not only underlines the social activities at the Leipzig location, but further supports a sustainable form of cultural promotion – along with the company’s own values.
Combining regional responsibility with a global presence
As a global company and one of the leading suppliers of flavours, fragrances, botanical extracts and ingredient specialities to the beverage and food industry, as well as the household care and personal care industry, Bell Flavors & Fragrances represents quality, reliability and above all creativity. These values are also lived up to by the Leipzig Gewandhausorchester, thus ensuring a strong bond between the two partners. Through its commitment as a Classic Partner, Bell supports the Gewandhausorchester in maintaining its artistic performance and the attractiveness of its concert programme (commissioned compositions, performances by world-class soloists, promotion of young talent at the Mendelssohn Orchestra Academy) as well as in strengthening the role of the Gewandhausorchester as Leipzig’s ambassador for guest performances abroad. Based on a strong attachment with the city, Bell’s partnership also focuses on the responsibility for the Leipzig location and its cultural charisma far beyond national borders as well as on a global level.
Oliver Saalmann, Vice President Flavours Division:
”We are very proud that we could find a partner such as the Gewandhausorchester that also combines regional responsibility and global presence and with whom we share common values. Cultural commitment is a high priority for us and is particularly characterised by our strong historically evolved connection to Leipzig and the region. We are looking forward to our future cooperation and to further promoting the cultural diversity of the Gewandhausorchester“.
The Gewandhausorchester: from town band to institution of international renown
The Gewandhausorchester is the oldest civic symphony orchestra in the world. The enterprise was founded in 1743 by a group of 16 musical philanthropists – representatives of the nobility as well as regular citizens – forming a concert society by the name of Das Große Concert. The Gewandhausorchester´s unique contribution to Europe´s historical and current musical wealth has been recognized with the award of the European Cultural Heritage Label. Music lovers worldwide revere the highly individual sound palette that distinguishes the Gewandhausorchester from all other symphony orchestras. This unique sound identity, along with the extraordinarily rich diversity of the repertoire which the Gewandhausorchester performs, is cultivated in over 300 performances each year in the Orchestra’s three ‘homes’: as concert orchestra in the Gewandhaus, orchestra of the Leipzig Opera and orchestra for the weekly performances of the cantatas of Johann Sebastian Bach with the Thomanerchor in St. Thomas’s Church. The Gewandhausorchester has toured the globe on a regular basis since 1916 and enjoys almost unparalleled presence in the media of radio, television, CD and DVD. www.gewandhausorchester.de
