IFT’s Regional Sections offer a way for networking with professionals steeped in the science of food to make strategic connections at a local level. Bell recently exhibited at the Minnesota Section IFT Annual Suppliers’ Expo (October 12) and the Intermountain Section IFT Symposium and Suppliers Night (October 19-21), showcasing menu items with bold fruit and spice flavor blends, including Urfa Chili Meyer Lemon Snack Mix, Caviar Lime Nimbu Soda, Ponzu Togarashi Popcorn, Chocolate Hazelnut Brownie Bites and Caviar Lime and Dragonfruit Taffy. Citrus flavors resonate particularly well among those looking to support their immune systems and increase their vitamin C intake. Sudachi Snack Mix        

This snack mix features Bell’s Sudachi flavor to lend tart and fresh notes of a Japanese Sudachi lime. Sudachi is a small, round, green citrus fruit and is a specialty of the Tokushima Prefecture in Japan. Given its natural sourness, it’s not typically eaten as a fruit, but rather used as a flavor in place of lemon or lime.

This delicious mix also features Bell’s Wasabi flavor to impart a heat-driven spice while Bell’s Kokumi technology makes the snack mix more rich and complex.

 

 

Citrus Slice Gummy Medley: Buddha’s Hand, Calamansi and Blood Orange 

 Buddha’s Hand: Bell’s Buddha’s Hand flavor has a distinct flavor profile, boasting notes of lemon and yuzu with a sweet, lemon blossom aroma and offering a unique spin on the classic fruit slice candy.

 Calamansi: Bell’s Calamansi flavor displays blended notes of tart lemon, lime and orange. This citrus fruit is commonly used in Filipino and Southeastern Asian cuisines and can range from green to yellow to orange in color.

Blood Orange: Bell’s Blood Orange Citrus flavor has notes of navel orange with hints of tartness and floral fruits and is usually less acidic than a traditional orange.

 

Pink Limoncello Champagne Spritz Mocktail

Top 5 Trends From Plant Based World Expo 2022

Bell Flavors & Fragrances captures a snapshot of what was trending on the show floor at Javits Center in September 2022.

 

From September 8-9, the latest trends in plant-based foods were on full display at Plant Based World Expo (PBW) 2022 inside Javits Center in New York City.

In its third edition, the official tradeshow for the Plant Based Foods Association (PBFA) once again provided a unique platform for brands, manufacturers, distributors, as well as retail and foodservice professionals to experience what’s next in the world of alternative proteins.

The tremendous buzz surrounding plant-based foods was palpable inside Javits Center for two action-packed days. More than 245 exhibitors, including significantly more international brands, showcased their offerings in front of more than 3,700 attendees; up 20% from 2021.

Spotlight on Plant-Based Foods

Sweet, savory, functional, and gourmet: Walking the halls provided guests with a chance to taste and discover the latest iterations of plant-based foods and technologies.

Product presentations on the floor were supplemented by content-rich PBW platforms such as the Culinary Theater, Learning Garden, and Conference sessions. On that note, the number of sessions featuring experts and industry insiders more than doubled compared to last year!

Standouts included strategic assessments like “Understanding the Consumer Shift from Animal to Plant-Based” hosted by PBFA and Kroger, as well as the “The ‘Why’ Behind Today’s Food & Lifestyle Trends” by Eve Turow-Paul and “Learn How to Build Flavor Without Compromising Your Diet” by Chef Shenarri Freeman.

 Another PBW highlight returned this year: The winners of the official 2022 World Plant-Based Awards were announced during the show, chosen from over 140 entries in 17 categories from 20 countries.

Celebrating Vegan Deliciousness

Products from Bell clients featured center-stage in the sample dishes presented at the Bell Flavors & Fragrances booth (number 602). Under the theme Bell Taqueria, visitors had a chance to taste Vegan Al Pastor bites featuring alternative protein from MycoTechnology, Inc. seasoned with Bell’s pork and Mexican pepper flavors, accompanied by a delicious vegan chipotle and lime crema.

Continuing the deliciousness, Bell dished out Vegan Cookie Dough, based on chickpea protein and packed with vanilla and browned butter flavors. Rounding out the taqueria offering, Bell served non-dairy Horchata Iced Coffee using ethically sourced coffee from Westrock Coffee loaded with a vegan whipped topping by Ingredion enhanced by coconut milk flavor.

Overall, sampling was in full swing at the Bell Flavors & Fragrances booth during the entire show. Meanwhile, we also made time to walk the halls and explore the 5 Top Trends from Plant Based World Expo 2022 in New York City:

1.   Next Wave of Alternative Seafood

Vegan chicken bites and faux beef burger patties are already becoming ubiquitous on mainstream menus. Now alternative seafood proteins present the next wave in terms of product innovation. On that note: When it comes to making tuna, salmon, and shrimp alternatives taste like the ‘real thing’, Bell provides a number of vegan seafood flavors and technologies to make them pop.

At Plant Based World Expo (PBW) 2022, the innovation in #altseafood was undeniable: Ingredion sampled the latest iteration of their fish tacos, while several brands showcased versions of plant-based tuna salad. Virginia’s Plant Based Seafood Co. wowed visitors with their vegan Crab Cakes, while BeLeaf won the World Plant-Based Award for their plant-based shrimp.

The next level of innovation? Plant-based sushi and ‘raw’ fish! Finless Foods showcased a raw tuna alternative that can be used in poke bowls – without the negative effects of overfishing. The same goes for Current Foods and their delicious ‘raw tuna’. Great news, since worldwide tuna stocks have been depleted by 60 percent compared to 50 years ago.

2.   Humungous Fungus

Move over, soy and seitan! The market for mushroom-based protein is literally growing like mushrooms: From 2022 to 2029 the fungal protein market is projected to grow at a CAGR of 7.6% to reach $397.5 million.

Fungi were also sprouting at Plant Based World Expo (PBW) 2022. Mushrooms scooped a win in the World Plant-Based Awards, with The Mushroom Meat Co. taking the trophy for their pulled ‘pork’. Colorado-based MycoTechnology, Inc. harnesses the growth engine of mushrooms, known as mycelium, in their FermentIQ™ Protein. It’s made by taking pea protein or a pea and rice protein blend, then fermenting it with shiitake mushroom mycelium to create meat analogues like the chorizo taco served at their booth.

Hailing from South Korea, the Better Meat company impressed with their Plant-Based Luncheon (aka. vegan Spam) that uses mycoprotein to taste like the real thing. Mushroom flavors also popped off in Popadelics crunchy mushroom chips and in numerous condiments featuring luxe truffle aromas.

3.   Rooted in Culture

Bell's Vegan Al Pastor Bites: savory vegan pork sausage combined with Guajillo Chili, Chipotle and pineapple, stu ed into a crispy corn cup, topped with a delicate vegan avocado cilantro crema.

Vegan food is even more attractive when it’s founded on genuine cultural roots. And consumers love it: Two out of three U.S. consumers “love” to discover new flavors and cuisines. Meanwhile, 39 percent of consumers in the U.S. are trying to incorporate more vegan foods into their diets.

Including those vegan flavors gets much easier thanks to products like UK-based Shicken, which brings Pan-Asian delights such as curries and chicken kebabs into the meatless consumer sphere. After only 18 months in business, Shicken is already sold at Costco in the UK and created much buzz about a U.S. launch with their culturally rooted flavors at PBW.

Speaking of culture, Italy-based Mia Green Food delivered vegan versions of parmesan cheese, prosciutto, and pepperoni with zero animal ingredients and cholesterol, but all the authentic Italian flavor notes. Food connoisseurs also raved about Verduns’ veggie pate, while Swiss start-up Share delivered fermented apricot based on an ancient recipe from the Tang Dynasty for flavor and gut health.

4.   Peak Vegan Cheese?

While past editions of the show saw an explosion of chicken protein, walking the halls this year was impossible without seeing countless iterations of plant-based cheese. That’s no surprise: The global market for plant-based cheese was valued at $2.43 billion in 2021 with an expected compound annual growth rate (CAGR) of 12.6% until 2030.

Scoring a win at PBW 2022, European innovators New Roots AG clinched the award for the ‘Circular Economy Approach’ behind their plant-based alternative to hard cheese. Hailing from Germany, Bedda showcased a variety of cheeses from brie to cheddar. Speaking of variety, Bell Flavors & Fragrances has developed a library of over 30 vegan cheese flavor profiles, replete with matching flavor enhancers and masking technologies to build deep aromas (see more info here).

Much to the delight of Italian food lovers (also see 3. Rooted in Culture), Miyoko’s Creamery returned to show ‘lifelike’ mozzarella both in solid form as well as a liquid for melting on pizza. In the show’s dedicated section for start-up companies, Plant Smart LLC delivered the world’s first fat free plant-based cheese, Cheezilla, alongside a melted cheese alternative named Melteeza. And for an adult take on a childhood staple, GrownAs* Foods served up Truffle Vegan Mac & Cheese.

Ending our trend report with a cherry on top, vegan desserts stole the show at PBW 2022. The manifold offerings of sweet delights in New York were indicative of a bigger trend: The global vegan dessert market is expected to reach $5.97 billion by 2027, while currently growing at double-digit rates.

In the plant-based desserts category, the World Plant-Based Award went to PLAYin CHOC for their ‘Organic Peruvian Cacao M•lk Chocolate’ with all that creaminess – but none of the dairy. Meanwhile, New York locals Rule Breaker Snacks bring nut-free and vegan brownies and blondies into school lunches, while Pri’s Puddings satisfy cravings on the go with pocket-sized pies. Not to forget Dandies vegan marshmallows by Chicago Vegan Foods, also known as makers of Temptation vegan frozen desserts.

Speaking of frozen, did we mention vegan ice cream? It’s now a full-fledged award category with SuperSeed Ice Creme by Eat Drink Innovate Pty taking the proverbial biscuit in the show awards this year. Lick ice cream made from Italian lupin beans also hit all the right flavors, while Bon Dévil’s Choc Ganache Desserts and Raw Cakes from Nats Rawline raised the bar for sinful delights with none of the (animal) cruelty.

Karen Graves, MS to Sit on Expert Panel Exploring Opportunities and Challenges for Leveraging Knowledge and Consumer Understanding for Product Success

Bell Flavors & Fragrances, Inc. (Bell) is pleased to announce that Karen Graves, MS, Senior Director of Sensory and Consumer Sciences, will represent Bell at the Institute of Food Technologists’ (IFT) 2022 First Annual Conference & Expo held in person and on demand from July 10-13 in Chicago, IL.

IFT First is the largest business to business food innovation expo, convening professionals from around the world both in-person and virtually to discover the latest innovations, global trends and strategic solutions, all while making powerful connections. The organization boasts 25 topical, interest-based groups (divisions), with Karen serving as the current chair for the Sensory & Consumer Science Division (SCSD). She will represent the Division at a multitude of events throughout the conference, including the SDSC Leader Innovation Lab, Networking Reception, Social and Student Competition, in addition to the SCSD Student Leader Networking Breakfast and Student Leader Networking Expo Floor, both of which are new this year.

As part of IFT’s on-demand program, Karen’s presentation, “Sensory, It’s Worth It. Know the Value of Sensory & Consumer Research,” co-presented with Sharon Bender, MS, Sensory Scientist at Gehl Foods, Inc., will be made available online via the IFT First portal. This session will help participants understand the value of sensory and consumer research. “While the traditional Sensory Consumer mantra focuses on designing/answering according to the objective, the expectation for today’s professional is to provide business value and drive decisions. Since Sensory & Consumer Researchers must have exceptional influence, business acumen, and communication skills, all while dealing with scientific and statistical data, this presentation will discuss tips and techniques to enhance the value of Sensory Research, Consumer Research, Discriminating Testing and Team Evaluations.”

In addition to her on-demand presentation, Karen will sit on an expert panel on Tuesday, July 12 from 3:15 – 4:30 pm CT as part of the session, “How Do We Leverage Knowledge and Consumer Understanding for Product Success?” This session will “bring together diverse voices and perspectives from select on-demand presentations that relate to this Guiding Question. The moderated discussion will outline challenges and opportunities for how to address the question, followed by an extended question and answer period where attendees will have the opportunity to engage with other attendees.”

Bell Flavors & Fragrances, Inc. (Bell) will be heading to the Institute of Food Technologists’ (IFT) 2022 First Annual Conference & Expo held in person and on demand from July 10-13 in Chicago, IL. IFT First is the largest business to business food innovation expo, convening professionals from around the world both in-person and virtually to discover the latest innovations, global trends and strategic solutions, all while making powerful connections. They’ll be joining over 700 exhibitors, debuting a new, immersive booth complete with a globally inspired tasting menu, educational resources and a team of culinary experts.

Bell’s new exhibit will take visitors on a journey like they haven’t quite experienced before. When approaching the exhibit, visitors will encounter a large reception counter complete with a back lit glass case, locking storage and iPad stations, their first touchpoint with the Bell team. Once inside, they’ll be able to grab coffee and free, printed resources from the hospitality counter. Visitors can then head to the food and beverage pairings counter, equipped with a demo counter, sink and refrigerator, where the culinary team will serve delicious global eats. Similar to the food and beverage pairings counter, the tasting counter will provide refreshing mocktail beverages that can be sipped at the soft, lounge style seating area. The exhibit also comes equipped with a flavor gamification counter and a food and product display window with locking storage.


Through their trend program, “Spark,” which showcases flavor and fragrance trend inspirations, Bell discovered that consumers are in search of escapism, traveling around the globe to find authentic and unique flavors from Eastern Europe to colorful and inspiring recipes of Latin America and Malaysia. They’re discovering the bounty of culinary surprises that the sea has to offer while exploring the wonders of nature in their own backyard, including local ingredients and heritage recipes that are foundational to our culinary existence.

Bell Flavors & Fragrances announces Sensory & Consumer Science’s leadership role at IFT and recent conference presentations

Karen Graves, Senior Director of Sensory and Consumer Sciences at Bell Flavors & Fragrances, is the new chairperson for IFT’s Sensory & Consumer Sciences Division

Bell is pleased to announce this new role taken on by Karen Graves, effective on September 1st, 2021.

In this role, Karen will direct a leadership team to ensure proper planning, organizing, and implementation of activities aligned with the divisional strategic plan. Key activities include: content for IFT’s FIRST 2022 Conference, educational seminars and newsletters, and networking events designed for professionals and students.

 

“I am honored to be the Chair of the IFT Sensory and Consumer Science Division. IFT is an integral part of the food industry and I am proud to give back to the community.  It is exciting to collaborate with other leaders to enhance Sensory Consumer understanding,” says Karen.

 

Bell’s Sensory & Consumer Science Department shares insights at IFT’s FIRST 2021 Conference and Pangborn Sensory Symposium.

Karen presented at IFT’s FIRST 2021 Conference in a session called “Drawer of Mistakes”. The session featured a series of speakers who discussed technical mistakes made during their career as a Sensory and Consumer researcher that have turned into learning opportunities for others. Karen shared a mistake where confusing preparation instructions were used in a consumer in home use test.

 

She also presented in a sustainability workshop at the 2021 Pangborn Sensory Symposium. During this workshop, Karen talked about how the Sensory and Consumer Science department validates sustainable ingredients to use in Bell’s multitude of flavors, fragrances, and botanicals.

Bell Flavors & Fragrances Presents Trends at 2021 Sweets & Snacks Expo in Indianapolis

To help open the show on day one, David Banks, Director of Marketing at Bell, hosted an interactive session in which he broke down five macro trends that are shaping consumer behaviors that make up the foundation of Bell’s Spark trends platform.  These macro trends included Finding Silver Linings, Well-Balanced, and Escapism and illustrated how they affect the consumer and the products they gravitate towards.

Banks explained, “We start with identifying deep-seeded macrotrends happening with consumers such as emotional states and cultural drover, not fads.”

“We combine this with an understanding of the conscious and non-conscious decisions consumers are making and tie it back to that olfactory element that food and flavors can create,” he noted.

During the interactive tasting session, Banks explained how these turn into microtrends and how the industry can break these down into starting points for product development that will speak directly to the consumer, based on existing needs, state of the world, and cultural surroundings.

As Banks explained, the confectionary and snack industries are the introductory channels to different concepts and innovative ingredients. Consumers expect newness, but also comfort and familiarity- a balance that is not easy to achieve. Thanks to his extensive walk-through attendants left with a clear sense of where newness was coming from and what was the conductive thread through the hundreds of exhibitors.

Finding Silver Linings

The need for comfort, indulgence, and nostalgia was a focus through last year and will keep going strong in the future. The emotional level at which a product can connect to the consumer was heightened and brands did not disappoint when providing innovation. One of the best examples is the upcoming Reese’s Potato Chips Big Cup and Garrett’s Popcorn S’mores.

Well-Balanced

“People focused on the basic human need to take care of themselves,” Banks told the audience, adding the three microtrends of mood and emotions, self-care and functional. Consumers want to be more well-rounded and attend to all physical, emotional, and spiritual needs. Trü Frü and Sow Good caught a lot of attention thanks to their healthy, fun, and innovative approach.

Escapism

Snackers are looking for excitement. New textures, presentations, ingredients and anything that takes them away from their comfort zone will drive curiosity and can turn products into hits.

Nerd’s Gummy Cluster’s stood out as Best in Show thanks for the combination of flavors and textures.

During the Supplier Showcase Day Bell presented innovative flavors that tapped into all of these trends. The team developed a very well received concept of Escapism that included a trendy and unique Pink Pineapple, a complete line of terpene flavors for sweet and savory applications that gave the impact of specific cannabis strains, as well as a decadent Hazelnut Chocolate truffle.

From 23 to 25 October Bell Flavors & Fragrances EMEA presents environmentally friendly fragrances as well as latest technology developments at SEPAWA Congress in Berlin. This year, they put the focus on the efficient and sustainable use of resources that enables first-class products, and at the same time help to protect the environment.

The creation of inspiring fragrances is part of the core business of Bell Flavors & Fragrances EMEA. The company is steadily working on improving its established products to meet the growing demands for functionality and environmental compatibility. The enterprise was founded in 1743 by a group of 16 musical philanthropists – representatives of the nobility as well as regular citizens – forming a concert society by the name of Das Große Concert. The Gewandhausorchester´s unique contribution to Europe´s historical and current musical wealth has been recognized with the award of the European Cultural Heritage Label. Music lovers worldwide revere the highly individual sound palette that distinguishes the Gewandhausorchester from all other symphony orchestras. This unique sound identity, along with the extraordinarily rich diversity of the repertoire which the Gewandhausorchester performs, is cultivated in over 300 performances each year in the Orchestra’s three ‘homes’: as concert orchestra in the Gewandhaus, orchestra of the Leipzig Opera and orchestra for the weekly performances of the cantatas of Johann Sebastian Bach with the Thomanerchor in St. Thomas’s Church. The Gewandhausorchester has toured the globe on a regular basis since 1916 and enjoys almost unparalleled presence in the media of radio, television, CD and DVD.
